Valdeón

The chefs at Boqueria spent 6 hours on winding, one-lane roads through the mountains to reach the region of Leon. And it was worth it. Valdeón is an intensely flavored blue cheese and in Leon, you can experience Valdeón with every course. In Villalobos, a municipality located in the province of Zamora, Castile and León, villages maintain some of the original historic structures including fences and wolf traps used to protect the herds of sheep. One person would sit in the wolf trap with a spear while the sheep were funneled into their pens. With nowhere to hide, the wolf was captured by the innovative cheesemakers.
