Spring Arrived. The Bar Followed.

There’s a moment every spring when the bar program shifts. The stirred, spirit-forward drinks of winter give way to something fresh, chilled, shaken — herbal, citrusy, built for afternoons that refuse to end. The patio fills. The afternoon stretches. The bar delivers.

Spain and spring show up in every glass. Fino sherry. Cava in the sangria. The celebrated logic of an apéritif hour that starts at four and has no firm end time. Longer days, colder glasses, and the kind of drinking that feels like it was invented for a terrace somewhere warm.

Take Fino What You Did Last Summer. Blanco tequila, strawberry, basil, lime, clarified milk, fino sherry. The sherry lands dry and nutty just before the finish, underneath everything bright. The clarified milk gives it a silky, almost weightless texture. It arrives in a coupe looking innocent. It isn’t.

Adult Summer Camp goes the other direction: Banhez mezcal, Pueblo Viejo reposado, apricot liqueur, lime, Aleppo salt rim. Smoky and sweet and a little dangerous, the way a good mezcal drink usually is. The Briar Patch pushes darker still. Rittenhouse rye, Ron Zacapa 23 rum, blackberry, balsamic. A stirred drink with depth and a slight edge.
And then there’s the Lychee Cosmo: Prairie vodka, Giffard Lichi-li, cranberry, lime, served in a coupe with a Pop Rocks rim that cracks and fizzes against the cold glass with every sip. Who could resist?

Don’t accuse our bartenders of neglecting our booze-free cocktails because you’ll find zero proof. A Better NA Negroni builds on Ritual Gin, Ritual Aperitif, Roots Divino, and Pathfinder, with expressed lemon and orange peel and a large cube. It earns the name. SPF Zero runs Ritual Tequila Alt with watermelon, verjus, lime, and guindilla pepper, finished with a bushy basil sprig. Bright, cold, just spicy enough. Drinking zero proof at Boqueria feels like a choice worth making.

Spring sangria runs alongside all of it, arriving cold and floral at whatever hour the afternoon demands. The season just started. The bar is ready.
