A month after we opened Boqueria in 2006, Giorgio DeLuca came in for dinner. Yes, that DeLuca, the one who opened Dean & DeLuca, the SoHo grocery that turned selecting an olive oil into an important status ritual.
When we opened on West 19th Street in 2006, pan con tomate was $5 on the menu, menu that earned us two stars from The New York Times and changed the way the city thought about tapas. Some of the people who dined with us back then are still regulars.
Some restaurants are designed to turn tables. The lighting is bright, the menu is efficient, the check arrives before you’ve decided whether you want another glass. You eat, you pay, you leave. Nobody meant anything by it. That’s just the model.
Nobody remembers the PowerPoint. Nobody remembers the balloon arch or the carefully curated playlist. What people remember is the table — who was there, what they ate, the moment the food arrived and the conversation stopped for exactly three seconds before someone reached across and took the last croqueta.
Group dinners have a way of becoming a second job. Someone starts a thread, seventeen opinions arrive simultaneously, three people have dietary restrictions nobody mentioned until now, and the restaurant that worked for everyone six months ago is suddenly closed on Tuesdays.
At some point between the last meeting and the commute home, the thought arrives: not yet. One drink first. Maybe two. Somewhere with a seat and something to eat and enough noise that the day starts to feel like it happened to someone else.
The food is always the thing people remember. Not the venue, not the playlist, not the centerpieces. Whether the meeting went well or the party ran late — what people talk about on the way home is what they ate.
There’s a reason nobody orders one tapa. You could. Technically nothing stops you. But that’s not how this works, and somewhere in the back of your head you already know that.

The search usually starts the same way. You’re hungry, you’re somewhere in the city, and you want a restaurant that won’t make you feel like you’ve compromised. Type in your neighborhood. Sort by rating. Scroll past the usual suspects.Â
Boqueria keeps showing up for a reason.
The bartender is mid-sentence about a Barça match when the gambas al ajillo land on the bar in front of the regulars. Nobody stops talking. The pan still sizzles. Someone tears off a piece of bread without looking down. This is the part of the evening that doesn’t have a name — not quite dinner, not quite drinks, somewhere in the middle where the best nights tend to live.
Some date nights feel like interviews.
Boqueria never does.
It’s built for conversation — not across a white tablecloth, but across shared plates. There’s something disarming about reaching for the same croqueta. About tearing bread together.
Tapas are not a course.
They’re not an appetizer.
They’re not a trend.
They’re a way of eating.

The door opens. The room hums.
